Rhubarb Slush
A refreshing frozen rhubarb slush spiked with rum and pink lemonade, topped off with lemon-lime soda when served. A perfect make-ahead summer drink that stores in the freezer.

Ingredients
- *1 lb chopped rhubarb (about 3 cups)
- *1 cup water
- *1/3 cup sugar
- *1 cup rum (more or less to taste)
- *1 (6 oz) can frozen pink lemonade concentrate, thawed
- *1 liter lemon-lime carbonated beverage (for serving)

In a large saucepan, combine the chopped rhubarb, water, and sugar. Bring to a boil over medium-high heat.

Reduce heat, cover, and simmer for about 5 minutes or until the rhubarb is tender.

Stir the cooked rhubarb mixture with a whisk to break down and eliminate any lumps.

Stir in the rum and the thawed pink lemonade concentrate until well combined.

Pour the mixture into an 8x8x2-inch pan, cover, and freeze until solid.

To serve: scoop about 1/3 cup of the frozen slush into a glass. Add 1/3 to 1/2 cup of lemon-lime carbonated beverage. Stir until mixed and enjoy.
