Ingredients

  • *1 lb chopped rhubarb (about 3 cups)
  • *1 cup water
  • *1/3 cup sugar
  • *1 cup rum (more or less to taste)
  • *1 (6 oz) can frozen pink lemonade concentrate, thawed
  • *1 liter lemon-lime carbonated beverage (for serving)

Instructions

  1. 1

In a large saucepan, combine the chopped rhubarb, water, and sugar. Bring to a boil over medium-high heat.

  2. 2

Reduce heat, cover, and simmer for about 5 minutes or until the rhubarb is tender.

  3. 3

Stir the cooked rhubarb mixture with a whisk to break down and eliminate any lumps.

  4. 4

Stir in the rum and the thawed pink lemonade concentrate until well combined.

  5. 5

Pour the mixture into an 8x8x2-inch pan, cover, and freeze until solid.

  6. 6

To serve: scoop about 1/3 cup of the frozen slush into a glass. Add 1/3 to 1/2 cup of lemon-lime carbonated beverage. Stir until mixed and enjoy.
