Greek Gyros

Marinated chicken gyros served with homemade tzatziki sauce and a fresh Greek salad. The chicken is marinated for hours in a Greek-spiced mixture, then grilled to perfection.

Ingredients

  • *2 pounds boneless skinless chicken thigh fillets
  • *3 large garlic cloves, minced
  • *1 tablespoon white wine vinegar (or red wine or apple cider vinegar)
  • *3 tablespoons lemon juice
  • *1 tablespoon extra virgin olive oil
  • *3 tablespoons Greek yogurt (preferably full fat)
  • *1.5 tablespoons dried oregano
  • *1 teaspoon salt
  • *Black pepper to taste
  • *2 cucumbers (to make about 1/2 to 3/4 cup grated cucumber after squeezing out juice)
  • *1.25 cups Greek yogurt (for tzatziki, preferably full fat)
  • *1 tablespoon lemon juice (for tzatziki)
  • *1 tablespoon extra virgin olive oil (for tzatziki, or more for a richer sauce)
  • *1 garlic clove, minced (for tzatziki)
  • *1/4 teaspoon salt (for tzatziki)
  • *Black pepper to taste (for tzatziki)
  • *3 tomatoes, desseeded and diced
  • *3 cucumbers, diced
  • *1/2 red Spanish onion, peeled and finely chopped
  • *1/4 cup fresh parsley leaves (optional)
  • *Salt and pepper to taste
  • *1 tablespoon oil (for grilling)

Instructions

    Place marinade ingredients (garlic, vinegar, lemon juice, olive oil, yogurt, oregano, salt, and pepper) in a ziplock bag and massage to mix.

    Add chicken to the ziplock bag and massage to coat all pieces with the marinade.

    Marinate for at least 2 hours, preferably 3 hours, ideally 12 hours, but no longer than 24 hours.

    Make the tzatziki: Cut cucumber in half lengthwise and scrape out watery seeds with a teaspoon.

    Coarsely grate the cucumber using a box grater.

    Wrap grated cucumber in paper towels or a tea towel and squeeze to remove excess liquid.

    Place cucumber in a bowl and add Greek yogurt, lemon juice, olive oil, minced garlic, and salt.

    Mix to combine and set aside for at least 20 minutes for flavors to meld.

    Prepare the salad: Combine diced tomatoes, cucumbers, red onion, parsley, salt, and pepper in a bowl.

    Brush an outdoor grill with oil and preheat to medium-high heat, or heat 1 tablespoon oil in a fry pan over medium-high heat.

    Remove chicken from marinade and cook for 2 to 3 minutes on each side until golden brown and cooked through (cooking time depends on size of chicken pieces).

    Remove chicken from grill or pan onto a plate, cover loosely with foil, and let rest for 5 minutes before serving.

    Serve chicken with tzatziki sauce and Greek salad on the side.
