Ingredients

  • *8 large eggs
  • *1/3 cup heavy cream
  • *3/4 cup shredded mozzarella
  • *Kosher salt to taste
  • *Freshly ground black pepper to taste
  • *Pinch of red pepper flakes
  • *2 tablespoons extra-virgin olive oil
  • *1 shallot, minced
  • *3 cloves garlic, minced
  • *8 oz baby bella mushrooms, sliced
  • *1/2 cup ricotta
  • *3 cups baby spinach

    Preheat oven to 375°F.

    In a medium bowl, whisk together eggs, heavy cream, and mozzarella. Season with salt, pepper, and red pepper flakes.

    Heat olive oil in a large skillet over medium heat.

    Add minced shallot and garlic, cook until soft, about 5 minutes.

    Add sliced mushrooms and cook until soft, about 5 minutes.

    Add baby spinach and cook until wilted, about 2 minutes. Season with salt and pepper.

    Pour egg mixture into the skillet and dollop with ricotta.
